GREEN TEAS
Green teas are made from typically smaller, younger leaves and buds. Undergoing a minimum of processing, they are also referred to as non-oxidized teas. The leaves are first spread out on cool cement floors or rattan racks and allowed to wilt for a few hours. The leaves are then heated to remove much of their moisture and to stop the oxidation process. After another chance to rest for a while, the leaves are are rolled to give them special shaping and then finally dried until only 3% moisture remains. Green teas have long been enjoyed for their health-giving qualities as well as their unique and often subtle flavors. Interestingly, the aroma and taste can be quite different from one another. The color of the liquor can range from a bright jade green to a pale yellow and is best when drunk without any additions.

OPEN LEAF

WHITE TEAS
White teas are produced with minimal processing. The leaves are often only allowed to wilt and be air dried before packaging. In some varieties the leaves are steamed, sealing in the numerous health-benefiting elements. When brewed correctly, white teas release a very low amount of caffeine. This type of tea often only consists of unopened leaf buds and takes its name from the delicate white down that covers the buds. White teas yield a very special flavor and texture, with "nutty" overtones, and brew into a very light yellow liquor. The delicate aroma is reminiscent of an early Spring breeze. These high quality teas are available in limited quantities.
Teas are available in bulk packaging or in "The Tea House" brand retail packages. Price is per lb. Minimum quantity is 2 lbs. unless otherwise (*) indicated. Prices and availability are subject to change without notice. Custom blending available.

YELLOW TEAS
One of the rarest types of teas, Yellow teas are produced from carefully picked buds and leaves that are minimally processed. The leaves are stacked into piles where the internal heat generated from their decomposition, slowly stops the oxidation process. Virtually self-processed, the leaves also skip the pan-frying step. Yellow teas have more caffeine than green teas and yield light colored infusions and delicate taste and aromas.
Teas are available in bulk packaging or in "The Tea House" brand retail packages. Price is per lb. Minimum quantity is 2 lbs. unless otherwise (*) indicated. Prices and availability are subject to change without notice. Custom blending available.

OOLONG TEAS
Referred to as half or semi-oxidized, Oolong teas are made by combining elements of green and black tea processes. After wilting, the usually larger, older leaves are carefully rolled around on rattan trays in order to “bruise” their outer edge. The black outer and green inner parts of the leaf give these teas their characteristic qualities. The liquor is usually a light brown and can sometimes reveal a slight fruity taste. Some high grade Oolong leaves can even be brewed up to 10 times.
Teas are available in bulk packaging or in "The Tea House" brand retail packages. Price is per lb. Minimum quantity is 2 lbs. unless otherwise (*) indicated. Prices and availability are subject to change without notice. Custom blending available.

BLACK TEAS
Black teas come from many parts of the world. Taking up to ten separate steps in the process, these fully-oxidized leaves are also referred to as red tea for the dark-reddish color of their brew. Some leaves start out and remain whole. Others may be intentionally broken or torn during processing. Black teas have a robust flavor yet often a mild aroma. Taste can range from slightly fruity to pungently smoky and are sometimes taken with milk, sugar, lemon or other additives. Bring fresh water to a full boil when making these teas.

PU ER TEAS
Technically defined as post-fermented, sun-dried green tea leaves, plucked from the Big Leaf variety of tea tree growing in Yunnan province. Pu Er teas belong to the post-fermented category which is called Hei Cha (black tea). This is not to be confused with what is called black tea in Western cultures (so called for the dry leaf color). Chinese call that Hong Cha or red tea (for the color of the liquor). Sometimes, to avoid confusion in English, the term Dark Tea is used to refer to post-fermented teas. This would include fermented teas from other places in addition to Pu Er which is the name of the tea trading town from ancient times. There are two types of Pu Er, Raw (Sheng) and Ripened (Shu or Shou). Sheng Pu Er requires aging and the longer the tea is stored, the better and more valuable. They are usually greener in nature with more vegetal tastes and more complexity. Shu Pu Er is made by an accelerated fermentation process and can be consumed immediately after it is made. They are much darker than Sheng Pu Ers, with more earthy characteristics and a smoother mouth feel. Sheng Pu Ers are most commonly pressed into cakes, melons or bricks. Shu Pu Ers can also be found in loose form as well as compressed. Pu Ers are well known to have health benefiting properties and can yield many infusions. Many people collect them just like vintage wines.

FLAVORED & SCENTED TEAS
It is common practice to blend two or more black teas from different regions, even different countries, with one another to ensure consistent quality or create unique flavors. Other, non-tea, ingredients such as fruits, flowers, spices, and herbs are also mixed with a base of tea leaves. The result is a full-bodied beverage and an almost limitless variety of unique flavors. THE TEA HOUSE can even prepare your own personal special blend.

HERBALS
Technically speaking, herbals contain no actual tea and so the term infusion or tisane would be more correct. For thousands of years, people have consumed herbs for their healing or health maintenance properties. Today, flowers, fruits, leaves, bark, roots, seeds and even nuts are also combined to create wonderful and exotic-tasting drinks. Most herbals have little or no caffeine. Some may have an acquired taste while others are easily enjoyed.
Teas are available in bulk packaging or in "The Tea House" brand retail packages. Price is per lb. Minimum quantity is 2 lbs. unless otherwise (*) indicated. Prices and availability are subject to change without notice. Custom blending available.

FRUITS
Like herbals, these fruit blends, called tisanes, contain no actual tea. The fragrance and taste of these infusions are sweet and aromatic. Pieces of fruit combine to make nectars so delicious you will meet every sip with anticipation. Use near boiling water and steep a little longer to bring out the best flavor. These blends are another caffeine-free alternative and also make great iced teas.

DECAF TEAS
Though it has less caffeine than coffee, tea can also be processed to reduce the amount of caffeine. There are several techniques to accomplish this and while the taste and aroma are somewhat affected, decaffeination allows those with special needs to enjoy the pleasures of many traditional tea flavors.

Yixing Teapots
(pronounced EE SHING)
Yixing, near Shanghai has for centuries been known as “the pottery capital of China.” The world’s first teapots were created here during the Ming Dynasty (1368-1644 AD). And, to this day, the distinctive "zi sha" earthenware teapots are considered the best vessels for brewing tea, by tea aficionados. Often referred to as "purple clay" or "purple sand", there can be several color variations depending on what layer the raw material came from and how well it was refined. With designs taken from nature, geometric shapes, or artistic whimsy, these small teapots made the voyage to Europe with the first tea shipments in the late 17th century. They served as the models for the early Dutch, German, and English teapots. The small size ensures that the tea leaves will not steep too long, and that each cup will be fresh and hot. Notice the “Chop” marks on bottom of the pot, under the lid, and maybe even at the base of the handle. This is the insignia of the artist who skillfully hand crafted each pot.
It may take weeks or even months to create some of the more complex designs. A craftsperson may even need to make special tools that are specific to one design. In the past, a master would teach is art to several students but only teach his secrets to a select few or one. It takes many years of diligent training to master even one style. The main factors that determine a teapot’s value are; rarity of the raw clay, degree of refinement, complexity of the design and the skill and renown of the craftsperson. Though each is a collector’s item, Yixing teapots are made to be used and their colors can become richer with use. Their centuries of fame have led to counterfeiting and teapots made from clays from other places, though attractive, may not be suitable for consumption. It can take a studied eye to tell the difference but authentic Yixing clay is lead free and the natural porosity brings out the tea's best taste. We import our teapots directly from artisans in Yixing (sometimes in our own suitcases).

Tea Caddies
After selecting high quality teas, it is important to store them well. As tea leaves readily absorb aromas from other sources, an air tight caddy is the best. Sunlight, and radiant heat from it, can also damage fine teas so an opaque container is advised for storing on a counter or tea table. Originally the term "kati" was used to specify a quantity of tea - around 21 oz. Now the word is applied to all manner of delightful storage containers.

Compressed Teas
Since as early as the 4th century AD tea has been compressed into various shapes. Traditionally, they are called black tea in China. The dense shapes were more efficient to transport than loose leaves and the compacted leaves were more resistant to spoilage on the way to the border regions of the Chinese empire. They were used as forms of currency in trade with the nomadic tribe of Mongolia and Tibet and are still used today in those areas. Most cakes, bricks, bowls, cones, melons or other shapes are made of Pu Erh tea, a unique, earthy tea that is preserved at a higher moisture level. Aged for 20, 30 years or even more, some are sought after buy collectors. Authentic Pu Erhs come from Yunnan Province. The black tea bricks originate from Hubei Province. Hubei bricks were well know, especially by the northern tribes.

Infuser Mugs
One of the most exciting new ways to enjoy all benefits of the loose tea. Each mug comes with a matching infuser which is removed when the leaves have stepped the appropriate amount of time. Besides keeping the tea warm, for most designs, the lid also serves as a saucer for the unfuser.

Tea Cozies
Tea Runners - Hot Pads
Created exclusively for The Tea House by
Marie Gieser
Tea Cozies add a wonderful finishing touch to your tea service as well keep your tea hot. The Cover-Over design will fit most sizes and shapes of teapots and are easily removed and replaced. Our tea cozies are made by hand, one or two at a time, and are not mass produced. New designs are added to our collection frequently. All tea cozies are reversible. They are filled with just the right amount of insulating fibers. For most designs, the outer and inner layers are of machine washable poly-cotton fabrics. Styles, price and availability are subject to change without notice.
