Green Teas

 

 

 

Green Teas are made from typically smaller, younger leaves and buds. Quality grades are plucked in the spring season. After plucking, the leaves are heated to deactivate the enzymes and stop oxidation. Therefore, green teas are also referred to as 'non-oxidized" teas. The leaves may be pan-fried, steamed or even blanched immediately after plucking. They may also first be spread out on cool cement floors or rattan racks and allowed to wilt for a few hours. The heating process may serve to both de-enzyme the leaves and remove all the moisture or these may be two separate steps. The leaves may be rolled, twisted, curled, broken or even ground. Green teas have long been enjoyed for their health-giving properties as well as their unique and often subtle flavors. Interestingly, the aroma and taste can differ. Color of the liquor can range from a bright jade green to a pale yellow. Green teas are best when drunk without any additions.
